I lived about a block from there on the Homewood side of South Braddock (in an apartment in a house on the other side of that old school) and the bus dropped me off near there so it was an easy place to get a beer.Ryans pub is great but I never go there to drink. They have great grilled cheese though.The Sharp Edge in East Liberty/Friendship was my go to place when I lived near there.
Ryan's Pub was also a regular place when I lived on South Braddock.

I don't really have a regular bar, but my brother lives in Greenfield, and I second the nomination for Hough's on his behalf. I know my brother loves the place.Since you're a beer snob go to houghs in greenfield or caliente in Bloomfield next time you're here.

Casey's and The Smiling Moose. They actually want you to play metal there and you generally have to pay extra to play top 40 songs. I can't find anything wrong about that at all.

I prefer Danny's, in West View. Much cheaper than going anywhere in the city, and I know the food is always going to be good because my cousin is the chef. Delicious wings!

Slappy beat me to it. I really like both Caliente's and Hough's.Since you're a beer snob go to houghs in greenfield or caliente in Bloomfield next time you're here. It'll get you out of the downtown/south side vortex (still only 10-20 minutes away from town though on a weekend) and you can see more of the city but also have some tasty beers at bars that are actually parts of the neighborhoods they're in. They also don't have the patina of corporate ownership that makes some of the bars you named sterile IMO. They're owned by real people and not huge corps or a bunch of lawyers.
There are a boatload of fantastic dive bars in the city/north but those aren't ideal for a weekend with the wifey.
And Caliente's dry rub buffalo wings are pretty tasty, too. Meaning it is a buffalo sauce style dry rub, if that makes sense.

The correct answer to this question is Hough's
They have a large selection and don't blanket season-alize (ie: they have stouts in the summer and light brews in the winter). Their food is getting better. The bar itself has a decent look and feel. The people are a wide variety (not just hipsters or just neighborhood grumpy old guys or just college kids, etc).
A lot of the places mentioned already are good, very good... and Hough's isn't necessarily #1 in any specific category... but Hough's put together an overall package that puts it at the top of the list.

I like Independent cause it has good beer, weekend afternoon happy hour and it's a 2 minute walk from my place. I don't like that it doesn't have TV's, so the major incentive I have for going to a bar (watch baseball) isn't there...so I don't actually go often. I just yearn for them to shake their moto and get TV's so I can watch the Pirates there next season.

I don't really get the "no one goes to Lawrenceville" thing.
Hambones is more or less always crowded (at normal bar hours), Industry is pretty packed, T-Bird Cafe gets busy, and the craft brewers (Roundabout, Hop Farm, Full Pint) are also pretty busy.
