It’s not for me but do whatever the **** you want.A podcast I was listening to had a big fan response to the breakfast behavior of one of the hosts: ketchup on eggs. (Hello MiMH)
Much like ketchup on hot dogs in Chicago, I had no idea this was verboten. It was just a thing we do.
Is ketchup on scrambled eggs wrong? Or are they the dadhole?
I put a little ketchup on my plate and dab the egg in as needed. My wife squirts it directly on the eggs which is too much for me, but not something I would bother bringing up to her.

Ketchup on eggs is something most people outgrow by, like, 2nd grade. Maybe 3rd.

I vaguely remember my parents trying to get me to eat scrambled eggs with ketchup on them when I was a little kid. It might be a New England thing (I’m originally from Massachusetts).

Scrambled eggs, for me, is normally about working in mushrooms, meat, cheese, etc. Tough to do that with fried eggs. I do make several fried eggs a week as they are a quick and easy way to get some protein.

I like the ones Gordon Ramsay makes with sour cream. Lots of whisking, removing from heat, repeat. Good stuff.

That's generally the method I use, sans creme fraiche. 75% of the cooking time is of the heat.I like the ones Gordon Ramsay makes with sour cream. Lots of whisking, removing from heat, repeat. Good stuff.

I usually have around 8-10 hot sauces 'active' in the cupboard at any given time. Everything from Crystal/Tabasco up to multiple habanero/Scotch bonnet options. Current grand champ on the heat-o-meter scale is a sambal I got at the farmers market that is so hot it makes my eyes water when I open the jar.

I too have a crap ton of hot sauces in my fridge at the moment.
Cholula, Chipotle Tobasco, Franks, El Yucateca, Homemade red chili, homemade jalepeno, a red habanero, and maybe one or two more that I can't recall.

on the hot sauce/fridge note - how long do you guys leave stuff like this in your fridge before replacing? i have some teryiaki/yum yum type sauces I cook with infrequently and always wonder how long to keep around

My daily driver (at least these days) is Valentina Extra Hot. Good on damn near anything.
I dabble in Tabasco Green, Frank's Buffalo for wings (and these Buffalo Chicken Egg Rolls I make in the air fryer), and a couple of local hot sauces I recommend: Red Clay Provisions mild hot sauce is excellent. Lots of flavor, not a ton of heat.
