The worst part about vacationing and not wanting to eat in the restaurant is not being able to get too fancy with your takeout order.
Had brisket on Sunday (which was excellent and didn't get too soggy in the container), but "settled" for a fried seafood platter instead of broiled yesterday, as I can't see any reason why the broiled food wouldn't just steam itself in the container during transport.

Considering the fried fish is actually cooked by steam once the breading it set, I'm not sure how that isn't a net-zero tradeoff.

I haven't seen any of the new Chef's Table episodes yet, but the Aussie dude you knobs are bagging on worked for years at a Basque restaurant called Asador Etxebarri, which is currently ranked as the 3rd best restaurant in the world. When Tony Bourdain visited that restaurant 10+ years ago, he was the guide/translator for what Bourdain called (at the time) the best meal of his life, which he consumed standing in the kitchen using plastic tasting utelsils. Guy's good at cooking.
