I pulled the turkey out when the deeper part of the breast was 140-145 or so. Really trying to not overcook that part this year

It did... Worked out really well. Meat was very slightly pink and it stayed at 150 for a solid half an hour or so. I pulled ours out at 155 because I was worried about how long it was taking (originally planned for 150). Nah, no marshmallows in this. Basically mashed sweet potatoes as the base, with a topping of chopped pecans, brown sugar, etc.

I’m still stuffed from last night, and I didn’t even go nuts with the food. Going to the movies in a few hours and will probably wind up not getting my usual pretzel bites, too.

When I pulled the turkey at 155, the stuffing was at 144. 10-15 minutes in the air fryer while the turkey rested was all it needed to come to temp and get rid of a lot of the mushiness you get with stuffing that is in the bird.
