We are having a soup day at the office on Monday. I’m pretty pumped as my soup game is strong compared to the rest of my game.

Also, it is honey bell orange season, so i have that going for me, which is nice.

Ventresca is not a brand, it's a cut; it's cured belly. Ortiz (Spain) and Tonnino (somewhere in the Americas) are the best brands I've had. The Spanish stuff is usually from bonito tuna, but the other brand may be bluefin or yellowfin.

I do a dish we call 'pantry pasta' that leans on good canned tuna and/or sardines.

Gregory is one of my favorites... he was on Top Chef Boston, and I always loved seeing what he'd come up with. Dish looks baller. Might try it in non-boiler cooking and replace the cilantro with parsley as my wife abhors cilantro.

I've experimented with char siu recipes in the past, and I'm convinced that an authentic char siu recipe needs to contain fermented red rice tofu.

Clemson blue cheese, Italian pepperoncini, Greek olives, Spanish tuna and a baguette is a terrific way to attract three cats and a dog to the kitchen.
