Made a really nice fall dinner tonight.
Roasted pork tenderloin with a mustard and herb crust
Cauliflower purée with roasted jester squash, sprinkled with sage and brown butter breadcrumbs
Sautéed green beans with garlic
Stewed apples
I ate it too quick and forgot to take a picture, but it was bomb.

I guess this place is fairly known in the foodie community, but I just ran across Rancho Gordo: https://www.ranchogordo.com/ They grow and sell heirloom beans. They offer dozens of varieties that I've never heard of. I just bought 10 lbs worth, as well as a couple of their cookbooks.

Went to Fresh Market to grab steaks for dinner. Butcher recognized me, small talk for a bit. Get to the checkout line and noticed that he charged me $7.99/lb for my prime beef ribeye instead of the $33.99/lb that it actually costs. Hellz yeah, buddy.

I always say, make friends with the IT people at work. Same concept, always talk to your butcher/fish monger. Good things follow.

I would say that if you're away from the ocean, it's even more important to know the fish monger, because issues like freshness become even more important. My brother is on a first-name basis with the guys at Penn Avenue Fish Company.

If you up the budget you can get a Thermapen with an IR sensor opposite the probe. (I have one and it's my go-to)
I mean, if you 'upped the budget' you could also get a Tsukasa 270mm gyuto in Damascus steel. But you know what I mean.
