Ribs aren't too difficult, and they cook relatively quickly in BBQ terms. Pork is pretty forgiving. Brisket from what I understand is much more difficult. It takes some of the longest times to cook of the common BBQ meats and can turn into leather if not done carefully.

Okay... got an instant pot coming my way. What are some of yinz favorite recipes? I think I'm going to make some beef or pork for tacos this weekend. Of course, I gotta try making some refried beans as well.

although chili is the type of thing that can be made just as easy in a dutch oven and or regular old pot as it is to make in a pressure cooker

First instant pot "cook" is yogurt going in tonight... tomorrow: barbacoa and beans (no, no together, and no, not actual barbacoa... the chipotle version of barbacoa).

Yogurt: It's good, but I'm not great. I might try making greek yogurt next time. Probably more up my alley. And considering I eat yogurt every morning, it'll be a little bit of savings just making my own.

Beans: I don't cook beans very often because they take forever and canned beans are super easy. Made a batch of black beans. Had bay leaf, garlic, an orange, and onion in there with some salt. Took 40 minutes in the pot (no stirring, no nothing) and then 10 minutes to cool a bit before releasing the pressure. I added some cumin and a little extra salt after they were done. At dinner I added a touch of hot sauce and wow. Soooo good. I'm looking forward to making more bean recipes, so if you've got any favorites, send 'em my way.

Carnitas: Followed this recipe... https://www.pressurecookrecipes.com/ins ... -carnitas/ Topped it with some fresh pico, pickled jalapeno, radish, and shallot. Then a touch of sour cream. Delicious, except the cinnamon being a little overpowering. Monday, we plan on taking the left over carnitas and beans and top some baked sweet potatoes with them.

Overall, pretty successful and for a $60 piece of equipment, I can certainly see me getting our moneys worth.

So I've been getting a lot of requests for some of my rub recipes, so much that people are now giving me 5 and 10 bucks for jars of the rubs.

Could I start to sell these things at a town festival or do I need "permits"

Tough to say. Usually you're only going to attract interest if you're selling things that are potentially dangerous (raw meat, dairy, nuts, etc.). There was a woman in Fresno (iirc) who was sentenced to community service for selling ceviche via a Facebook group. If you go to something like a farmers market, the market has the license and that covers the individual vendors.

Either way, put me down for a jar of your finest rib dust.

Someone mentioned it to me today. I never even gave it much thought. But I know I'm the kind of guy who will walk through a festival and see a tent with random stuff... Dips, rubs, spices, etc... And always give it a try just in case it's good.

Maybe I'll give it a go at some point if this keeps up.
