Made a really nice fall dinner tonight.

Roasted pork tenderloin with a mustard and herb crust
Cauliflower purée with roasted jester squash, sprinkled with sage and brown butter breadcrumbs
Sautéed green beans with garlic
Stewed apples

I ate it too quick and forgot to take a picture, but it was bomb.

I guess this place is fairly known in the foodie community, but I just ran across Rancho Gordo: https://www.ranchogordo.com/ They grow and sell heirloom beans. They offer dozens of varieties that I've never heard of. I just bought 10 lbs worth, as well as a couple of their cookbooks.

Thanks for the link. I'll likely buy some pintos, negros, and garbonzos for our normal stuff. Curious as to usage for some of the others....

The recipe gallery seems pretty robust, so there's that.

I've been invited to do some product testing for a new Breville countertop oven. Yay4me
Might that be a competitor to the new Anova steam oven?
It arrived today. I can't say what it is, but I can say it is not that.

My sister in law asked for a $100 cooking themed gift idea so I told her a nice knife... Then she told me it had to be TSA carry on compliant  so I switched to a Meater

Thermapen would be good, too. (Unless the probe is considered too stabby for TSA)

I have a Lavatools Javelin Pro that is outstanding. Would absolutely recommend.

Went to Fresh Market to grab steaks for dinner. Butcher recognized me, small talk for a bit. Get to the checkout line and noticed that he charged me $7.99/lb for my prime beef ribeye instead of the $33.99/lb that it actually costs. Hellz yeah, buddy.

I always say, make friends with the IT people at work. Same concept, always talk to your butcher/fish monger. Good things follow. :thumb:

I would say that if you're away from the ocean, it's even more important to know the fish monger, because issues like freshness become even more important. My brother is on a first-name basis with the guys at Penn Avenue Fish Company.

I took piano lessons from Bob Wholey's first wife back in the day. We got hooked up with fish because of that.

When we lived in Redondo and San Pedro we could buy local seafood from wholesalers who bought the day's catch directly from boats that were often moored in sight of the market.

Good timing? You can get a grey Thermapen for under $60 right now, which is a steal: https://www.thermoworks.com/Classic-The ... =1&color=1

They have other models on closeout, too.

I actually suggested this, then thought of the Meater when she said he liked to smoke meats.

If you up the budget you can get a Thermapen with an IR sensor opposite the probe. (I have one and it's my go-to)

I mean, if you 'upped the budget' you could also get a Tsukasa 270mm gyuto in Damascus steel. But you know what I mean.
