Why did none of you jabronis tell me how easy and delicious whipped ricotta is?!? Ricotta, salt, pepper in a food processor until creamy. Sh*t is dope. I put a shmear on the plate and topped it with a grilled asparagus and spring onion salad that was dressed with a lemon vinaigrette. Would have been dope on a piece of toast and topped with thinly sliced radishes, but was still good as it was.

Anyone been to Henry's Meat Market in Harrisville PA? We went camping up there at Yogi Bear's Jellystone Park Kozy Rest and stopped there. I dont think I've ever seen an entire meat showcase dedicated to smoked sticks and jerky. But I am not complaining.

Danger is correct. NYC has dirty water dogs, we have danger dogs. TIL that NMSU has a Chile Pepper Institute. Very cool.The sriracha shortage comes as droughts in parts of the U.S. have caused officials to order water cuts for residents and businesses, including agriculture. Huy Fong, the maker of sriracha, has cited spring weather-related crop failure as the reason behind the shortage.
Stephanie Walker, a chili specialist at the Chile Pepper Institute at New Mexico State University, said less water and more heat can stress all crops, especially chilies at the seedling stage, where they can die.
“Drought is absolutely a concern,” she said about the low yield of chile crops. “That, combined with high heat, would hurt seedlings after they’re planted in the field.”

Got our rancho gordo delivery last week and made some black beans to go on tacos with sweet potatoes and chard. Man are they different from the canned black beans. Almost have a sweetness to them that I wasn’t expecting at all. Looking forward to trying the others, especially the garbanzos.

That shortage was like 10 years ago. Neighbors complained because their factory is in like the middle of a neighborhood and the pepper crushing was causing respiratory issues.

The bean and veggie tacos continue...Got our rancho gordo delivery last week and made some black beans to go on tacos with sweet potatoes and chard. My wife made some cranberry beans (from rancho gordo) with some bacon. Added some zucchini and corn, topped 'em with some pickled onion, radish, jalapeno and some sour cream. Incredible. Definitely enjoying the flavor and texture of the beans from rancho gordo.

The campaign was traced to a single neighbor who had a personal dispute with either Huy Fong foods or CEO David Tran. He put up a neighbor/friend to complain, then he himself filed a complaint (to cover his tracks, you see), and before long literally 12 people complained.That shortage was like 10 years ago. Neighbors complained because their factory is in like the middle of a neighborhood and the pepper crushing was causing respiratory issues.
In the end almost all the complaints filed came from 4 addresses, all close friends of each other, and complaints were filed directly with the council not the air quality regulatory board. (Turned out Patient Zero was friends with or related to a councilman)
It was one of those things that as soon as there was any measure of media attention people took their names off complaints and the vote to drop the lawsuit was unanimous. I don't remember there being any interruption in production then, but I could be faulty. It wasn't the last time HFF and Irwin dale have clashed, but that's the one I remember from around that time period.

For the cookout we had a few weeks ago I broke out my Anova circulators and set up two baths in the garage to handle the ribs and chicken. Things have been in storage since 2016 but fired up straight away. Did a clean cycle on each, then immediately tipped into 4-hr cooks. It was excellent.
Also got the Anova bar sealer a few weeks ago. Still working out operational kinks on my end (because I am a dingus), but so far I love it.
