Yins do Salt or butter or both?
Growing up, we had a stick of butter that was devoted to rolling corn on it during the summer months. I'd then coat mine with pepper and a touch of salt.
a good American with a good choice in corn on the cobb

My wife views butter-stick-rollers as incels.
Well it was my mom who started it, so.....

Also, there is nothing better than corn that was picked, husked, and eaten within an hour of harvest. When I moved away, I was taken aback when trying corn that was picked the day before. It's just not the same.

This is the first year corn has graced my garden. Can't wait for pickin' time.

Several places around me have the early stuff. Smaller ears, smaller kernels, not as full.. But still damn tasty.

Windy Heights in Ruffs Dale is tops IMO.

So my wife is interested (all of sudden) in air fryers. Any recommendations? @dodint did you end up getting one?

No, sorry. Just no room for another counter top appliance.

As an aside, 'air fryer' is on the list of things my brother in law looted from my MILs place while she was passing away.

I got a crazy good deal (self checkout price error) on an Oster all in one convection oven/air fryer. I was skeptical but it is fantastic, and eliminates the need to find room for an extra appliance.

A beauty shot for the pork shoulder I made over the holiday weekend.

Image

Rubbed with sweet paprika, smoked paprika, brown sugar, black pepper, garlic powder, and onion powder. I had to go salt-free because I was serving family members with dietary restrictions. Smoked in my cheapo Oster smoker oven for ~8 hours at around 225° with a blend of hickory and pecan chips.

Why didn't you soak it in a bag at just above room temperature?

If I had to guess, probably because he doesn't have a vessel or bags large enough to contain a whole shoulder to cook it SV.

Trashbag and bathtub'll do. Nothing adding more time won't cure.

we learned the hard way last night that when roasting eggplant, despite the lack of instructions in the recipe, you need to poke holes in it. on the bright side, the oven is clean now......

If I were asked to name the ingredients of the artichoke and jalapeño dip from Trader Joe's, beyond obviously artichokes and jalapeños, my first guess would be pulverized unicorn bones.

Attn Joulers and Cook With Joulers: Chris Young just posted some really great news about ChefSteps in the Facebook group. They and Joule are joining the Breville family of products.

He didn't go into detail about what that will look like (will ChefSteps still exist as a brand? etc), but the future of the company and the product is now pretty solid. Well, at least as solid as Breville is.

Seen that. Good news for sure.

So hey FAF. Wife's planning lil mac's bday party and the theme is jungle related.

What can big Mac smoke on the smoker that's jungle related?

Jungle says "pork" to me. Or maybe something like jerk chicken.

Grilled plantains also seem jungle-like.

Maybe smoke a pineapple like this?

'Jungle' + 'food' to me conjures thoughts of southeast Asia. But thoughts of southeast Asian food do not conjure associated thoughts of smoked stuff. Grilled, yes. Smoked, only inasmuch as grilling inherently imparts some smoke flavor.

(And I'll add a second to Shyster's suggestion of jerked this-or-that, which goes back to more of a grilled approach.)
