One of the really hidden pain points of moving is figuring out what/who does stuff. My plan was to go to Costco to refill our gas grill propane tank, but really didn't want to deal with not having a recently recertified tank (evidently they are strict about that). So I went to the local propane company and it was $10. Isn't that really cheap? I paid $15.75 about a year ago to fill the same tank.

I pay $16 for a grill tank from the propane supplier. That's very cheap. Unless they didn't give/need to give you a full 20lbs

I used to do blue rhino propane exchanges at Walmart for $16. Now I go to a local place that refills. It’s usually around $12.
$10 is a good deal.

Breville has released Joule Turbo. I've been testing it for a few months now, and I am sorry to say it is not an improvement over the OG device. The Turbo feature is of frankly dubious utility; the physical alterations to the form factor (taller and skinnier; slightly repositioned water exhaust; shorter AC cord, etc) make it marginally less useful; the new app is wonky, in part because they're shoehorning in joint operability with the Joule oven controls.

The good news is Legacy Joule owners who don't even have a Joule oven don't have to worry about app controls for the oven. The bad news is, oven or not, Legacy Joule owners will have to worry about it in a few months, because they are planning to sunset the old app.

No you can use them, but you'll have to use the new app that has integrated functionality for a product you don't have. And it's not a good app.

Ah, okay, that makes more sense. I saw the latest app update and figured we’d be getting a notification. I rarely SV anymore, so as long as I can at least use it for basic functionality (I tell it how done I want it, how thick it is, and fresh/frozen, and it tells me time and temp), I’m good.

ChefSteps have been developing Turbo* for at least 5 or 6 years, pre-Breville. I saw a demo of an early version of it the last time I was there, which was 2018 iirc. The most common complaint about sous-vide is the time it takes (which is odd to me, because that time is 100% passive), so one of their long-time collaborators worked on developing a way to deliver similar results in half the time. Ergo, Turbo.

Turbo works by spiking heat into the food early in the cook. It's basically the same idea as 'carryover', but they do it at the beginning of the cook. So if you want a pork chop to be 140°F, it will start out heating the water to, say, 170°F for 5 minutes, then 160°F for 24 minutes, and so on, gradually stepping down the bath temperature. Depending on what you're cooking there might be half a dozen temp/time combos automatically vtriggered during the cook. The food will reach core temp in about half the time as normal, but it won't be edge-to-edge uniform doneness. Visually, it doesn't really look much different, but it is noticably different in texture. You can't start from frozen (which is a big deal for me), and you need to actually measure the thickness of your food and weigh it before you start; the algorithm that calculates the steps is more critical as to size of food, so the new Joule actually ships with a small ruler and you need to apply your own scale. Normal sous-vide still works as before, and all the same guides are still in the app, but the new app is a bit wonky to navigate; if you know you're time and temp, you can still just enter that manually (which is like 99% off my cooks). It is definitely a YMMV situation. Don't hold me to this, but I believe Legacy owners will be eligible for a discount on a new Turbo (like $50 or $75, iirc), maybe it will be something you need to try for yourself. I wasn't moved by the need that drove the development in the first place, so maybe I'm not the best judge.

Pretty much a chocolate chip cookie with butterscotch chips, oats, pretzels and potato chips. Just do it.
I'm dry running a batch of these tomorrow. They're mixed up and sitting in the fridge. If I don't screw them up and they turn out delicious, I'm on the hook for three dozen for my sister's wedding.

Aside from Milk Bar, Momofuku also came up with a salty bar snack using ramen broth leavings. Make the broth and strain off whatever solids used to infuse flavor into the liquid. Take the leftover 'sludge' and spread it out on a baking sheet and dehydrate it, then break it up into chip sized bits, and season aggressively. (I sense you need a heavy hand with the salt because if you infused the broth properly there shouldn't be much left behind in those solids, flavor-wise)

I haven’t made em in a while, but if memory serves, they were a touch butterscotch heavy.

Speaking of which, I made pancakes for dinner tonight and while my daughter got chocolate chip, I made my wife and I my new favorite variation in the pancake. Sprinkle chocolate chips, butterscotch chips, walnuts or pecans (had pecans tonight) and then sprinkle some brown sugar on it. Cook it a little harder on the first side to really let the batter set and then flip. When you see the brown sugar really bubbling, take it off and flip so the toppings side is facing up on the plate. It’s really good.
