Yeah... you have to take the time to cut them 1" or even smaller to get an appreciable amount of starch out. And again, I doubt you'd be able to tell a difference between soaked and just rinsed.

Mashed potatoes are overrated. They are a solid role player, but no way should they be in the elite category.
They won the original poll by a wide margin. But, like you say, as a role-playing staple but not the star.
You had them ranked 2nd, and "noodles" 4th (dafuq?)
Yeah, we talked about it later in the thread but it's basically this, but instead of 'creamy' it's in its own light gravy/broth:

I think sweet potatoes have a bigger payoff at the top, but there's a much smaller window for them to be good. It's like a boom or bust prospect for me.

That's what I was picturing, but wasn't sure...do you mix anything else into it? Onions? Peppers?

Mashed potatoes are a gravy delivery vehicle.
My brother usually makes garlic bacon mashed potatoes where the ratio of bacon to potato is something like 1:2 by weight. Those are not a gravy-delivery vehicle.

This year he's skipping mashed potatoes and making a similarly bacon-heavy German potato salad.
