on the hot sauce/fridge note - how long do you guys leave stuff like this in your fridge before replacing? i have some teryiaki/yum yum type sauces I cook with infrequently and always wonder how long to keep around
Check the expiration date, dummy

I always kind of assumed ain't nothing growing in a bottle of Dave's Insanity Sauce that will do something worse to my insides than the sauce itself.

If it smells bad it's bad,
That's a good rule of thumb for most things in life really.

If I am putting anything on eggs, it's some high quality hot sauce.

Can we all agree that scrambled eggs are for children? Please. Like. I can’t continue here if I know some of you “adults” are eating scrambled eggs.

Scrambled eggs can be a gourmet treat. Gordon Ramsay's recipe is a great example.

I don't really use ketchup for anything...

But scrambled eggs is just fine...I keep them kind of "together" and fold some vegetables into them and maybe put them on like a wrap usually with some hot sauce...but that's still basically scrambled eggs...I don't break them into half-bite size pieces...but it's the same basic thing...

I keep my scrambled together frequently because it’s easier to make breakfast sandwiches that way.

The German word is Rührei (stirred egg), which I guess is why some people I know (including my mother) think they need to stir the eggs constantly until they dissolve into a thousand tiny flakes.

Teri sauce should be refrigerated after opening (use your nose to tell if it's gone off), but hot sauce - particularly a vinegar-based one - does not require refrigeration.

Yeah, I've seen another video at his home kitchen making those. I like my eggs a touch firmer than that, but that's good stuff.

The hardest part of the recipe is probably finding a store that sells creme fraiche. I'm going to check out Wegmans.
