So my question is: since our car is not used for "racing", but it is primarily a "daycare-taxi" , should I be still concerned about "H" vs. "V"?
Not really. The H and V are speed ratings, and both H and V are already ratings for performance-oriented tires that are almost certainly excessive for a family vehicle (unless you'll be taking the kids to daycare using the autobahn).
I would note there might be a difference in tread life. The tires in your second link have a UTQG treadwear rating of 620, but the tires in the third link have a UTQG treadwear rating of 440. The UTQG number is an inexact number that roughly measures how quickly a tire wears. The higher the number, the more resistant the tire is to wear. Generally, the higher the speed rating of a tire (which usually directly correlates to how high of a performance tire it is), the lower the treadwear one gets, because for tires the main tradeoff of better grip is higher wear. That appears to be reflected in the lower number for the third tire. So you might have a lower purchase cost for those tires up front, but the tires might wear out faster than the other ones.
