Keeping it simple tonight...taco night. And none of that fancy homemade sht, Old El Paso kit, Goya Spanish Rice (that stuff is legit), refried beans, etc.

We have a hard time with grilling here. There's kind of like 10 months of the year where we have an almost constant 15 mph breeze (with higher gusts), and that's not good for a charcoal fire and embers blowing all over the place. Today it seems kind of calm, so I'm thinking of Santa Maria BBQ. Tri-tip, pico, beans, etc.

We use the old el paso kit every time we make tacos pretty much.Keeping it simple tonight...taco night. And none of that fancy homemade sht, Old El Paso kit, Goya Spanish Rice (that stuff is legit), refried beans, etc.

Although I like the Reduced Sodium taco seasoning so much better.

We use the reduced sodium pack. Tastes the same as the regular stuff...to me at least.Old El Paso is the best!
Although I like the Reduced Sodium taco seasoning so much better.

The regular seems to have a slightly bitter taste to it. If I’m doing two pounds, I’ll use the pick from the kit and one packet of reduced sodium.

I've found that I need to retry pretty much everything that I thought I hated as a young man. I've avoided beans (like black, kidney, pinto, etc) my entire life. I hated them as a kid and into my young adult life. Now I absolutely love them. Recently, I was hungry and the only thing available in the break room was a bunch of bananas. I've always hated bananas, but I figured I'd give 'em a go. Delicious. Loved it. wtf? How did I hate these as a kid? Now I need retry all these things I hated as a kid. Next on the list: peaches, honeydew/cantaloupe, hard boiled eggs (including deviled), and tuna... pouch and/or canned.

Texture was an issue... I think that was the issue with bananas as well.

I'm not sure. It looks fine. I did one quart jar. I threw it in the fridge just in case. I'll probably eat them this week sometime.

When Chi-Chi's opened in Altoona, it was sort of a big deal. (Prior to that, we just had Taco King, which I still recall the taste of their hardshell beef tacos fondly.) The first time we went, someone at the table next to us ordered fajitas, and my life changed. That sizzle, that smell..... so good. It's one of my earliest new food memories.Fajitas are an underrated meal.

They're so easy too. Some cumin, coriander, chili powder and lime juice. Toss in cast iron and serve.
